Wheat Gluten (conc) is a fine, light tan colored powder obtained from high quality wheat flour. The raw material is wheat flour to which water is added to remove the starch, and protein level is adjusted with maida, followed by drying and grinding so as to get fine gluten powder.
The high protein content and excellent quality of wheat gluten (conc) makes it the protein of choice in all bakery application. It is also used to boost protein levels in breakfast cereals and noodles, and is widely used as a useful nutrient and binder in feeds for aquaculture.
Wheat gluten (conc) is mainly used in milling and baking industries. It can be also used in other application as listed
1. As a source of protein in breakfast cereals.
2. As a binder in stuffing and meat products.
3. As a strengthening agent in pizza dough and other pastries.
4. As a texture improver in pasta.
5. As a source of protein in vegetarian meals and snack products.
6. As a binder and source of protein in pet foods.
Wheat gluten (conc) can be used at 0.5% level on dry maida.
